Basil Gelato (Italian Ice Cream)

  • 25 g Fresh Basil Leaves
  • 170 g Sugar
  • 500 ml Double Cream
  • 250 ml Whole Milk
  • Salt
  • 5 Eggs Yolks
  • 1 Zest of a Lemon


  • few Strawberries
  • Balsamic Vinegar Glaze


  • Clean the leaves of basil with water and dry them well.
  • Put them in a mixer with sugar and half of the cream. Activate the mixer until you get a smooth mix.
  • Pour half of the mixture aside, adding the rest of the cream and mixing well.
  • Pour the rest of the mixture in a small pot, and add the milk and salt. Warm it up but do not let it boil.
  • Beat the eggs and add to them the warm mix, really slowly and always mixing.
  • Thicken the mix by cooking it.
  • Once it is thicken, strain it and add to the rest of the aside mix. Add the lemon zest.
  • Cool it down in the fridge for 2 hours.
  • Pour the mix in an ice cream maker for 15 minutes, 1-2 speed or put it in the freezer and mix it every 1 hour.
  • Serve with some strawberries and balsamic vinegar glaze.
