Winter is so cold and foggy! And what is better than good food in order to make the most of these days?  Here my Baked Polenta Chips, baked so I do not feel too bad afterwards 😀 But if you prefer you can fry them!

Here the link to the Polenta I have used! Be careful to buy the pre-cooked one, you do not want to stir for 40 minutes!

Feel free to add any extra spice you like to make these Chips an amazing experience. If you are feeling really sad I strongly advice to add  also 100 g of your favorite grated cheese to the Polenta mixture at the same time you are adding the spices. Enjoy! And obviusly serve with a Mayo dip!

Instructions
  1. Mix the spices all together to create the spices mix.
  2. In a big pot bring to the boil 1600 ml of water.
  3. Slowly add 400 g of pre-cooked Polenta, stirring continuosly.
  4. Boil or few minutes (max 3 minutes) until you have a thick mixture.
  5. Add the spices mix and the salt and keep stirring for few more minutes.
  6. Once the mixture is thick, pour it in a loaf shape covered by baking paper.
  7. Even it out and let it cool down in the fridge for 1 hour.
  8. Once the Polenta is cool, take it out from the fridge and cut out from it chips.
  9. Put them in a baking tray covered by baking paper, sprinkle Truffle oil, Rosemary and Black Pepper on top.
  10. Bake in the oven at 180 degrees for 25 minutes plus 5 minutes with grill and enjoy 😀
