Cavolo Nero and Lardons Orecchiette Pasta

Enjoy this quick but rich of fibres and tasty pasta, ideal for a quick dinner! Orecchiette means “little ears” in Italy, and this pasta type is widely used with broccoli and other types of cabbage and greens in south of Italy. It is a really nice pasta, as it really absorbs the juice of the vegs and bacon from the sauce! Add a little bit of cheese and a miracle dinner is ready 😀

Cavolo Nero and Lardons Orecchiette Pasta

Ingredients
  

  • 250 g Cavolo Nero
  • 70 g Lardons
  • 1 brown onion
  • 300 g Orecchiette Pasta
  • Salt
  • Pepper
  • 1 tbsp Olive Oil
  • 1/2 Vegetable Stock Cube
  • 3 tbsp Parmigiano Cheese

Instructions
 

  • Chop the onion and cut the cavolo nero in a finger long and wide shape.
  • Stir fry the onion until it is cooked, add the lardons and cook them for 5 minutes. Add the cavolo nero.
  • Add a glass of water and the vegetable stock and let it cook, covering with a lid.
  • Meanwhile bring the water to boil, add the salt and then the orecchiette pasta. Boil for 10 minutes (or what the pack says!) to make them al dente!
  • Once the orecchiette are cooked, mix them with the cavolo nero and lardons sauce.
  • Serve each dish, sprinkle on it the cheese and pepper. Enjoy!
