Risotto for me it is a really warm dish that helps to fight the cold and rainy winter weather.
I really like mushrooms also, so I have tried several different ones here in UK. I think one of my frozen favourite ones are the Waitrose ones. I do not really like the "normal" fresh ones, as I am used to the strong flavour of italian mushrooms, that is missing in them. I have recently tried the bluebutton mushrooms, and I really liked them, but they are really expansive and not easily available. When you do not have good mushrooms , but only normal ones, my advice is to use some mushrooms stock cube, it always help!
You can substitute the dried sausage with fresh sausage, but you would need to let it stir fry few extra minutes.
