Risotto for me it is a really warm dish that helps to fight the cold and rainy winter weather.

I really like mushrooms also, so I have tried several different ones here in UK. I think one of my frozen favourite ones are the Waitrose ones. I do not really like the "normal" fresh ones, as I am used to the strong flavour of italian mushrooms, that is missing in them. I have recently tried the bluebutton mushrooms, and I really liked them, but they are really expansive and not easily available. When you do not have good mushrooms , but only normal ones, my advice is to use some mushrooms stock cube, it always help!

You can substitute the dried sausage with fresh sausage, but you would need to let it stir fry few extra minutes.

Instructions
  1. Chop the dried sausage (sometimes in UK it is also called salami), and the white onion.
  2. In a pot stir fry the chopped onion with the oil and after few minutes add the sausage and stir for few minutes.
  3. Add 200 g of Arborio rice (the only one that will make your risotto perfect) and toast if for few more minutes.
  4. Meanwhile do your broth, boiling 600 ml and adding half of your vegetables or mushrooms stock cube.
  5. Add the broth to the risotto and stir.
  6. Add 150 g of frozen mushrooms and let it boil for 16 minutes.
  7. At the end add grated cheese and let it melt. Taste if the risotto is cooked before you turn off the flame.
  8. Put your risotto in a dish and enjoy!
