Chickpeas Tuscany Soup

A tasty and so easy warm up for amazing, light but feeling dinners!

Ingredients
  

  • 1 medium Onion
  • 2 Chickpeas Cans
  • 2 Courgettes
  • Parsley
  • Black Pepper
  • 1 Vegetable Stock Cube
  • 1 Pelled Tomato Can
  • 1 Cherry Tomato Can
  • 1 tbsp Extra Virgin Olive Oil
  • 2 medium Carrots

Instructions
 

  • Chop the onion and stir fry for few minutes, until they are golden.
  • Cut the courgettes and the carrots in cubes, between 1 and 2 cm long.
  • Add the courgettes and the carrots to the onion, and add to it the chickpeas, the tomatoes and the vegetable stock cube.
  • Cook for 20 minutes, until carrots and courgettes are soft.
  • Add parsley and black pepper. Enjoy!
