One Pot Seafood and ‘Nduja Paella

One Pot Paella Seafood and ‘Nduja

Italy meets Spain in this fantastic one pot paella dish, a summer explosion of flavour!

  • 200 g Arborio Rice or Paella Rice
  • 500 g Mussels (fresh are much better – clean well if fresh)
  • 200 g Clams (fresh are much better – clean well and let it for few hours in salty water to purge the sand)
  • 3 cloves Garlic
  • 4 King Prawns (ok is you find them frozen)
  • 0.5 g Saffron (also the little bags of crushed saffron are fine if you only find them)
  • 20 g ‘Nduja
  • 3 tbsp Extra virgin olive oil
  • 1 Fish Stock Pot
  • Parsley
  • 1.2 tsp Smoked Paprika


  • Crush the garlic and in a big pot (enough to contain all the fish and rice) stir fry it with the nduja and oil.
  • Meanwhile clean the fresh mussels and clams very well, discard all the ones open or broken.
  • Add the rice to the nduja and garlic mix and let it toast for 2 minutes max.
  • Add the mussels, the clams and the king prawns to the pot with the saffron, smoked paprika and the fish stock pot. Add around 500ml of boiling water as well.
  • Let it cook for 13 minutes (check the rice cooking time to make sure) and add boiling water if the pot gets dry.
  • Add parsley, to lift all the flavour! Enjoy 😀

    how do you measure “1 fish stick pot” and how do you add it in step 4.
