It is a legal requirement in Italy, that women and men in order to have their citizenship at the age of 18 need to take a test and show they can make pasta!!

Of course I am kidding, come on!! By I like to eat fresh pasta now and then and I do not like the flavor of the pasta that is sold in the supermarkets. It is TOTALLY different!

Also to make some pasta 10 minutes plus 30 to rest in the fridge, so it is not time-consuming at all!

Sometimes I do also freeze the fresh pasta so I can use it when I have friends over, straight from the freezer to the boiling pot!  It is so easy to make and your friend will be totally impressed!!

Instructions
  1. Step 1: In a bowl mix the plain flour with the eggs. Make a dough out of it by kneading for 10 minutes
  2. Step 2: Let the dough to rest for 30 minutes in the fridge, covered with cling film
  3. Step 3: Take the dough, and using the rolling pin or a pasta machine give the shape you like it.
