Easter is coming, and this year is going to be sunny and warm! So, what’s better than make your own sausage rolls with an italian twist to have in a pic-nic? Enjoy!!!

  • 1/2 tbsp Extra Virgin Olive Oil
  • 2 Cloves of Garlic
  • 1 Brown Onion
  • 2 tsp Fennel Seeds
  • 1 tsp Salt
  • Black Pepper
  • 500 g Pork Shoulder Mince
  • 250 g Pork Bacon Mince
  • 1 Egg Yolk


Prep the meat

  • Chop the onion and crush the garlic. 
  • Toast the fennel seeds with the extra virgin olive oil and let it cool down. 
  • Mix the raw meat with the rest of the ingredients and leave it overnight in the fridge.

Roll the sausage rolls

  • Take the puff pastry (ready or hand made, see my hand made one above) and roll it if necessary really thin.
  • Warm your oven up for at least 15 minutes at 180 degrees.
  • Meanwhile fill the pastry with sausage and roll it, using the egg yolk to stick the pastry together. While you are rolling do one turn and half, so the closure of the sausage rolls is on the side. With a knife score the pastry on the top and spread more egg yolk.
  • Bake for 20 minutes, and if necessary get rid of the melted butter at the end and turn the sausage rolls on the other side to bake for 5 more minutes, to make an exceptional bottom too!
