Lentils Warm & Easy Soup

I love lentils, rich of good carbs and proteins, always there to confort you, especially in a rainy winter day as today! Easy also to prep and freeze, and therefore have there as an emergency/work meal. Enjoy!


  • 4 Carrots
  • 1 Celery
  • 2 Red Onions
  • 1 Pelled Plum Tomatoes Can (400g)
  • 2 Vegetable Stock Cubes
  • 350 g Brown Lentils (You can change and use different ones, but always check the cooking time!)
  • 2 tbsp Extra Virgin Olive Oil
  • 1.5 liters Boiling Water


  • Chop the vegetables (carrots, celery and onion) in small cubes (I like in cubes as I think they retain the flavour).
  • In a non-stick pot stir fry them few minutes with the oil.
  • Add the washed lentils, the water and the vegetable cubes. 
  • Let it cook for 20 minutes, stirring now and then.
  • Enjoy!
