Mediterranean Lamb Shanks with Cus Cus

Mediterranean Lamb Shanks with Cus Cus

Equipment

  • Ninja Foodi (otherwise Pressure Cooker and a pan)

Ingredients
  

  • 2 Lamb Shanks (300 g each)
  • 1 tbsp Worcestershire sauce
  • 1 Lamb Stock Pot
  • 1 medium Onion
  • 2 Celery sticks
  • 2 Carrots
  • 1 can Peeled Plum tomatoes
  • 1 tsp Oregano
  • 1 tbs Rosemary
  • 3 Bay Leaves
  • Fresh Parsley to serve
  • 100 g Cus Cus
  • 1 tbsp Extra Virgin Olive Oil
  • 1 Vegetable Stock pot

Instructions
 

  • Chop the onion, 1 of the celery stick and 1 carrot. Stir fry with the oil for few minutes. Add the lamb shanks and brown them all over.
  • Now in the pressure cooker or in the ninja foodi, add the rest of the ingredients (except the cus cus and the vegetable stock pot) – the other celery stick and carrot should go in chunks. Let it cook for 30 minutes (increase the time if the lamb shanks are bigger). Cook a little but more on the hob for few minutes if the sauce needs to be less watery.
  • Boil some water and drop into it the vegetable stock pot. Take it out from the fire and let it rest for 10 minutes.
  • Serve the cus cus with on top the sauce, the lamb shank and few basil leaves. Enjoy!
