What about a light but really tasty breakfast to start the weekend with a smile? I really love to have for breakfast every saturday morning something different, but this is one of my favorite recipes.

It takes no time at all compared to other recipes and the butter it is only used to butter the pan! Moreover, it can be done with frozen berries (I prefer them as they give the moist feeling to the pancakes). So,with all the basic ingredients that you normally keep in your larder and the frozen berries, there is no need to rush to the supermarket on friday night! Just relax and enjoy life , and the pancakes!

Instructions
  1. Put in a mixer all the ingredients except the berries.
  2. Mix all together for 2 minutes at an high speed.
  3. Add all the frozen or fresh berries you like. I have to say that I prefer it with frozen berries as they "melt down" when you are cooking them and make the pancakes feel so moist!
  4. Mix it slowly for one more minute.
  5. Warm up a frying pan (or if you have a pancakes pan) and butter it.
  6. Pour the mix in circles and let them cook for few (around 5) minutes on each side. Make sure they are well cooked inside before finishing.
  7. Spread with honey and build a tower! Enjoy
