  • 1 kg Octopus If you can ask your fishmonger to clean it for you!
  • 6 cloves Garlic
  • Extra Virgin Olive Oil
  • Parsley Fresh or Frozen
  • 1 tbsp Cappers
  • 500 g Cherry Tomatoes
  • Black Pepper
  • 1 Hot Chilly Pepper Fresh
  • 4 tbsp Green Olives
  • 1 Knorr Fish Stock Pot

  • Clean the octopus by removing the eyes, the tooth, and the internal organs and in case the ink pocket. You can always ask your fishmonger to do it for you as require some time and patience. Leave the skin on but wash well the octopus under water.
If the octopus is fresh you would need to pound the meat to tenderize it. If you bought one that was frozen you do not have to as the ice has already tenderize the meat for you!
  • Put some of the olives, the cappers, some parsley and 2 garlic cloves in the head of the octpus and close it with a cocktail stick.
  • Chop 4 cloves of garlic and the hot chili pepper. Stir fry 2 of them with the chili and some black pepper and add the octopus with the head up. Cook it around 15 minutes.
  • Meanwhile in another pot, stir fry the rest of the chopped garlic and add the cut cherry tomatoes. Cook them until they are melted down and add them to the octopus pot, cook it all together for 30 more minutes.
  • You can also add one fish stock pot with the tomatoes if you want to give an extra fishy flavour kick to the sauce.
