Chinese dumplings with cabbage

Pork Bao Buns

Equipment

  • Pressure cooker (if you want) or a normal pot

Ingredients
  

Dough

  • 500 g Strong Flour
  • 250 ml Warm Water
  • 7 g Fast Act Yeast (1 bag)
  • 5 g Sugar

Filling

  • 50 g Chopped Ginger
  • 3 Chopped Garlic Cloves
  • 1 tbsp Soy Sauce
  • 2 tsp Oyster sauce
  • 1/2 tsp Salt
  • 1 tsp Sugar
  • 300 ml Chicken Stock
  • 50 g Chopped Spring Onions
  • 500 g Pork Mince I used the 15% fats one.
  • Some Oil Anti-sticking action!

Cabbage with Red Sauce and Olives

  • 1 White Cabbage
  • 4 tbsp Tomato Concentrate
  • 1 Vegetable Stock Pot
  • Pepper
  • 20 Black Olives
  • 1 Brown Onion
  • 1 tbsp Extra Virgin Olive Oil
  • Hot Chili Pepper Powder (if you like it hot)

Instructions
 

Dumplings – Dough and Filling

  • Mix the dough ingredients together, and knead for about 10 minutes (I have used my kenwood, but you can do it with your hands, until the dough looks smooth).
  • Let it rise for 2 hours (my house was around 20 degrees).
  • Meanwhile chop the ginger, garlic and spring onions and mix with the rest of the ingredients for the filling. Let them rest so they get all the flavor.
  • Knead the dough again for 10 more minutes and let's start to shape it! With 500 g of flour, you can make around 12 balls of 60 g. Roll one ball at time with a rolling pin, leaving the center a little bit thicker and put in the middle 1 tbsp and half of filling for each. Close the dumplings at your best! I have just pinched all the external part of the dough to form a round shape dumpling, but you can choose any shape! let it rest for 10/15 minutes.
  • Steam the dumplings for 13 minutes. Do not forget to spread some oil in the steaming pan, so they do not stick to it!

Cabbage with Red Sauce and Olives

  • Cut the cabbage and the onion really thin.
  • Fry the onion with the oil for few minutes. Add then the olives and the cabbage.
  • Add to it the tomato concentrate, the vegetable stock pot and a little of pepper and hot chili pepper powder.
  • Cook in the pressure cooker for 4 minutes – or in the normal pot for 20 minutes – and let it rest and adjust with pepper.
  • Enjoy!
