I really like to have a piece of cake in the morning or in the afternoon, but I do not want to feel to bad about it, so I am always experimenting healthier and lighter recipes for my cakes.
In this case I wanted a cake that would give me that extra energy in the morning, but would also be delicate and fluffy. What better choice to have a cake with coffee, yogurt and walnuts in it? The taste is delicate and great with a cup of tea!!!!

Add in the mixer the walnuts and the sugar. Mix until they are powder. I have used the Themormix so I used the Turbo for 3 times.
Add the yogurt, flour, the baking powder, the espresso coffee and the eggs.
Mix again until the mix looks smooth. In the Thermomix I used 10 seconds on speed 5, then I have scraped down the ball and let it go for few more seconds.
Grease the tin with oil and some flour, then put the mixture in it and cook in the oven at 180 degrees (convection mode) for 30 minutes.
Add the honey and the walnuts on top if you wish. And enjoy!!!
