Baked Polenta Chips

Winter is so cold and foggy! And what is better than good food in order to make the most of these days? Here my Baked Polenta Chips, baked so I do not feel too bad afterwards!
But if you prefer you can fry them!Here the link to the Polenta I have used! Be careful to buy the pre-cooked one, you do not want to stir for 40 minutes!Feel free to add any extra spice you like to make these Chips an amazing experience. If you are feeling really sad I strongly advice to add also 100 g of your favorite grated cheese to the Polenta mixture at the same time you are adding the spices. Enjoy! And obviusly serve with a Mayo dip!

Ingredients
  

  • 1 teaspoon Black Pepper
  • 1 tablespoon Oregano
  • 1 teaspoon Garlic Powder
  • 1 tablespoon Rosemary
  • 1 teaspoon Salt
  • 1600 ml Water
  • 400 g Pre-cooked Polenta
  • Truffle Oil

Instructions
 

  • Mix all the spices, herbs and salt together.
  • Cook the polenta for about 3 minutes. Add the spice mix and stir. Cook until it boils. 
  • Pour the polenta in a loaf shape covered by baking paper. Let it rest in the fridge for 1 hour.
  • Cut the polenta into chips.
  • Bake in the oven covered with truffle oil, more rosemary and pepper for 25 minutes at 180 degrees (turning the chips after 15 minutes) and grill for 5 more minutes.
