Slow Cooked Lamb with Fennel

A really easy and tasteful main for Christmas or when you want something special!

  • Slowcooker


  • 1 kg Lamb Shoulder with bones
  • 1 Fennel
  • 1 tsp Fennel Seeds
  • 1 Chopped Onion
  • 2 Garlic Cloves
  • 1 tbsp Extra Virgin Olive Oil
  • 33 cl Dry White Wine (a glass)
  • 20 cl Marsala Wine (a small glass)
  • Salt
  • Pepper
  • 1 tbsp Cornstarch If needed.


  • Stir fry the fennel seeds with oil and brown the lamb.
  • Once browned, leave the lamb on the side and add to the oil and fennel seed the onion. Let them fry until golden.
  • Add the fennel and fry them as well for a little bit.
  • Add back the lamb and splash the white dry wine. Let it steam it out for few minutes.
  • Now put everything in the slowcooker, adding some salt and pepper.
  • Cook on low for 8 hours.
  • Once it is done, put the meat under the grill to finish it off for few minutes.
  • Add to the rest the Marsala wine and let it steam off. Let it reduce it down. If really liquid add some cornstarch. Use a mixer to blend all the juices and use it as a gravy.
  • Adjust of salt and pepper, serve the meat with the gravy on top and enjoy!
