  • 400 g Linguine (or Spaghetti)
  • 80 g Bottarga (from Muggine tastes stronger)
  • Bottarga to decorate
  • 80 g Water
  • 160 g Seeds Oil Do not use extra virgin olive oil as its flavour is too strong!
  • Salt (to boil the pasta)


  • Grate the bottarga if not bought already grated one.
  • In a blender, add the grated bottarga to the water and make an homogeneous mixture.
  • Slowly add the oil, while the blender is on, like you would do for a mayonnaise or an hollandaise sauce.
  • Your sauce is now ready, you just need to boil your pasta in salted water and adjust the consistency of the sauce with the water from where you have boiled the pasta (that's a starchy water, so will definitely help!)
  • Plate the linguine or spaghetti and dust them with the bottarga for decoration, enjoy!
