Baked Mediterranean Feta in Tomato Sauce with Miso Aubergines

Baked Mediterranean Feta in Tomato Sauce and Miso Aubergines

Ingredients
  

  • 200 g Feta Cheese
  • 1 can Cherry Tomatoes
  • 1 clove Garlic
  • 1 tbsp Balsamic Vinegar
  • 1 tsp Dried Oregano
  • Fresh Basil
  • 15 Black Olives Pitted
  • 1 tsp Extra Virgin Olive Oil
  • Salt and Peppers
  • 2 Aubergines
  • 2 tbsp Miso Sauce

Instructions
 

  • Crush the garlic and stir fry for few minutes with the oil.
  • Meanwhile clean the aubergines under water, remove the extremes and cut in half. With the knife make some cuts in the middle.
  • Spread the aubergines with miso sauce. Grill them for 20 minutes at 180 degrees, turn them around for 20 more minutes.
  • Add to the garlic the cherry tomatoes and olives and cook for 10 minutes at low.
  • Add feta, oregano, balsamic vinegar and bake under the grill in the oven for 15 minutes at 180 degrees.
  • Serve with fresh basil leaves and if you want a little bit more of extra virgin olive oil.
