Cherries Pavlova – in 3 steps

Ingredients
  

Meringue Nest

  • 4 Eggs White
  • 250 g Sugar (can be Caster Sugar or Normal Sugar)
  • 2 Tablespoons Vinegar (can be white whine or cider vinegar)

Topping

  • 600 ml Double Cream
  • 100 g Sugar (can be Caster Sugar or Normal Sugar)
  • Amarena Cherries in Syrup or Cherries with Cherrie Jam (or any other Jam and fruit you like)

Instructions
 

  • Whisk the eggs whites with the vinegar until a soft peak and then add the sugar. Keep mixing until it look glossy.
  • Spread in a circular/nest shape on baking paper and bake for 1 hour in a pre-warmed oven at 130 degrees Celsius max in a fan oven – 150 degrees Celsius in a normal one (can be less if it is  a strong oven, do not want to look goldish).Let it cool down the meringue once baked.
  • Whisk the double cream with the remaining sugar until soft peak and spread on the meringue nest. Spread on it the amarena cherries in syrup (can be substituted with cherries and cherries jam to make it simple!)
